A volatile oil is a hydrophobic liquid containing volatile aroma compounds derived from plants. Volatile oils are also known as essential oils or simply as the "oil of" the plant. Essential oil is a liquid that is generally distilled (most frequently by steam or water) from the plant parts. Volatile oils are the combinations of oxygenated compounds and hydrocarbons.
